Hiya, jw has anyone started the pastry assignment for the 2022 journal. I am stuck as to what to put into the intro and was wondering if anyone had any good notes?

Is that the choux, rough puff one ?

For the intro just list the basic ingredients of the pasrty (either choux or rough puff) and then start in to how they are combined together and the science behind that: gluten formation, steam, starch and gelatinisation, coagulation of proteins. don't forget to go through the shaping/ rolling for the dishes and the reactions that happen when making.
